Light amber colour. Rich fruity aromas of apples and pears combined with aromas due to long ageing.
This VSOP is marked with gourmet hints of vanilla.

The initial passes in the nose pick up curiously fabric-like scents right out of the gate, then with aeration the aroma settles down and offers more appropriate fragrances such as oaky vanilla, baked pear and baked apple. The palate entry is lovely, elegant, semisweet, and fruity; at midpalate, the spirit foundation emerges as the taste profile turns totally brandy-like, clean, refreshing and mildly spicy. "The topaz colour is completely brown, with no indication of orange, gold or rust: good purity. The opening nosing passes detect mature scents of cooking spices (black pepper, allspice, marjoram), tobacco leaf and spiced apple; following another six minutes in the glass, the aroma breaks open a bit more revealing traces of pear pulp, parchment, textile fibbers, and ok. The palate entry is delightfully sweet, yet fruity and lean; the midpalate stage is where the acidity kicks in, giving this brand a fine, lithe mouth feel and a crisp taste. Pommeau de Normandie
How do we produce Pommeau de Normandie?
Pommeau de Normandie is a blend made of three parts of fresh cider apple juice and one part of calvados. The appellation requires a minimum ageing of 14 months in oak barrels after the blend is made. However our Pommeau de Normandie is aged from three to four years. This extra ageing enables us to obtain a better balance with no apparent alcohol. We also take particular care in the choice of the apples used so as to obtain the perfect flavour, neither too sweet nor too heavy.
How to enjoy Pommeau de Normandie?
Pommeau de Normandie should be served chilled (8°to 10°C) in a tulip glass.
Its apple aromas, fruit exuberance and moderate sweetness make it many people's favoul'red aperitif. Before dinner, one can have it pure or in cocktails as a long drink with Champagne or even mixed with numerous spirits.
An excellent match with many desserts, it also gives a delicious apple perfume to many dishes.

Cidre Brut de Normandie
Le Cidre de Normandie est élaboré à partir de différentes variétés de pommes à cidre. Plus d'une cinquantaine de variétés sont utilisées. Les pommes amères riches en tannins confèrent au cidre sa structure et son corps. Les pommes douces sont employées pour leur caractère fruité. Les variétés restantes sont des pommes acidulées pour équilibrer la structure en bouche.
Les pommes à maturité sont ramassées, broyées puis pressées pour en extraire le jus qui va fermenter jusqu'à ce qu'il atteigne 2% ou 4% d'alcool (pour respectivement le Cidre doux et le Cidre Brut). Durant la fermentation, le contrôle de la température, ainsi que plusieurs soutirages, nous permet de maintenir un fermentation lente. Quand il atteint le degré d'alcool souhaité, le cidre est embouteillé sous pression. Le cidre Comte Louis de Lauriston est une agréable boisson, à la fois légère et fruitée, qui se marie aussi bien avec du poisson que de la viande. Les consommateurs recherchant une boisson naturelle, légère en alcool, riche en goût et en arômes aimeront le cidre Comte Louis de Lauriston.
Le cidre se boit frais, idéalement dans un verre à vin.

Poiré
Le poiré est une boisson traditionnelle faite en Normandie à partir de jus de poire fermenté. Il est composé de plusieurs variétés de poires telles que le "Plant de Blanc", le "Muscadet", "l'Avenelle" et la "Poire de grise". Rapidement pressé après avoir été ramassé, le jus de poire fermente naturellement pendant 5 à 8 semaines. Le Poiré est embouteillé au milieu du processus de fermentation. La fermentation va ensuite continuer à l'intérieur de la bouteille: le sucre se transforme en alcool et produit naturellement du gaz carbonique qui va former de fines bulles.
Notes de dégustation: Une couleur très claire avec des reflets dorés. Le nez est délicat avec des arômes de poire et une pointe de citron. Rafraîchissant en bouche en étant à la fois fruité et sec.
Comment déguster le Poiré: le Poiré est une boisson légère, élégante et rafraîchissante qui s'apprécie en apéritif. Il accompagne également parfaitement les terrines, les fruits de mer (excellent avec des huîtres), les salades (artichauts, scarole, frisée), les poissons à la vapeur, les sorbets de fruits et les fraises.
Le Poiré se boit frais, idéalement dans un verre à vin.

How on earth can an apple get into a carafe?
In April, apple blossom covers the trees with a pink and white mantle. In May the embryo of the fruit takes form in the heart of the fading flower. Non-fertilized fruits abort and fall shortly after flowering. Only 5% of fruit embryos become apples. If one waits for the aborted fruits to fall before placing the carafes over the young apples there is a risk that the neck will be too narrow. Placing the carafes too early is doomed to failure ! The difficulty consists in determining the accurate time for the flask to be attached to the branch so that the little apple can grow inside it during the summer.
In late September, the carafe is detached from the tree : it is carefully cleaned and filled with Calvados Comte Louis de Lauriston. During the long months of maceration, the flavours of the apple blend with those of the Calvados. Despite a failure rate that is high, we can offer a limited number of "Pomme Prisonnière" for sale.
To preserve "Pomme Prisonnière" in its full glory, all one has to do is to keep the apple topped with Calvados Comte Louis de Lauriston !
