| A blend of Calvados aged more than five years in oak casks. Light amber colour. Rich fruity aromas of apples and pears combined with aromas due to long ageing. This VSOP is marked with gourmet hints of vanilla. Supple, long, complex mouth. To be served with a Livarot cheese or as a digestive. "The inviting amber/honey beams under the light; superb purity. The initial passes in the nose pick up curiously fabric-like scents right out of the gate, then with aeration the aroma settles down and offers more appropriate fragrances such as oaky vanilla, baked pear and baked apple. The palate entry is lovely, elegant, semisweet, and fruity; at midpalate, the spirit foundation emerges as the taste profile turns totally brandy-like, clean, refreshing and mildly spicy. | How do we produce Pommeau de Normandie? Pommeau de Normandie is a blend made of three parts of fresh cider apple juice and one part of calvados. The appellation requires a minimum ageing of 14 months in oak barrels after the blend is made. However our Pommeau de Normandie is aged from three to four years. This extra ageing enables us to obtain a better balance with no apparent alcohol. We also take particular care in the choice of the apples used so as to obtain the perfect flavour, neither too sweet nor too heavy. How to enjoy Pommeau de Normandie? Pommeau de Normandie should be served chilled (8°to 10°C) in a tulip glass. Its apple aromas, fruit exuberance and moderate sweetness make it many people's favoul'red aperitif. Before dinner, one can have it pure or in cocktails as a long drink with Champagne or even mixed with numerous spirits. An excellent match with many desserts, it also gives a delicious apple perfume to many dishes. |

| Normandy cider is made of different varieties of cider apples. More than 50 varieties are used. The bitter kinds with a lot of tannins give our cider its structure and body. The sweet varieties are used for their fruit character. The remaining varieties are acidic apples which make our cider fine and fresh. Matured apples are crushed and pressed to extract the juice which ferments until it reaches 2% or 4% Alcohol (for Cidre doux and Cidre Brut). During fermentation, temperatures control as well as several racking enables us to maintain a very slow fermentation. When it reaches the suitable alcohol content, the cider is bottled under pressure. Comte Louis de Lauriston Cider is a very pleasant, light and fruity drink which can be enjoyed either with fish or with meat. Consumers looking for a natural drink, light in alcohol, rich in taste and aromas will appreciate Comte Louis de Lauriston cider. A tasting glass as for wine is the best – (I.N.A.O. glass) |

| Poiré is a traditional beverage made in Normandy by the fermentation of Pear Juice. It is made of several Pear Varieties such as Plant de Blanc, Muscadet, Avenelle and Poire de Grise. Quickly crushed after Picking, the pear juice ferment naturally for 5 to 8 weeks. Poiré is bottled in the middle of the fermentation process. Fermentation then continues inside the bottle: sugar is transformed into alcohol with natural production of carbonic gas with resulting bubbles. Tasting Notes : Very clear colour with gold highlights. Nose is delicate with pear flavours and citrus hints. Mouth is refreshing both fruity and dry. How to enjoy Poiré : Poiré is a light, elegant and refreshing drink which can be enjoyed as an aperitif. Recommended starters pairings : terrines, shellfish (excellent with oysters), salads (artichoke, endive, curly endive). Main Course : steamed fish Desert: fruit sorbets, strawberries. | How on earth can an apple get into a carafe? In April, apple blossom covers the trees with a pink and white mantle. In May the embryo of the fruit takes form in the heart of the fading flower. Non-fertilized fruits abort and fall shortly after flowering. Only 5% of fruit embryos become apples. If one waits for the aborted fruits to fall before placing the carafes over the young apples there is a risk that the neck will be too narrow. Placing the carafes too early is doomed to failure ! The difficulty consists in determining the accurate time for the flask to be attached to the branch so that the little apple can grow inside it during the summer. In late September, the carafe is detached from the tree : it is carefully cleaned and filled with Calvados Comte Louis de Lauriston. During the long months of maceration, the flavours of the apple blend with those of the Calvados. Despite a failure rate that is high, we can offer a limited number of "Pomme Prisonnière" for sale. To preserve "Pomme Prisonnière" in its full glory, all one has to do is to keep the apple topped with Calvados Comte Louis de Lauriston ! |
